Thanks to all who replied, often with some detail! about the
differences between the Scharf-Fix and the Brockman paring machines.
One final question that no one addressed-- are they worth it? I've been
paring by hand with a French paring knife for 16 years. Will a machine
really speed up production that much? Will is be easier to get
super-thin pieces (e.g. for labels) than doing it by hand? If the
answers are yes, I'm going to get one.
