Paste/Sauce



Having learned how to use a microwave to make sauces (basic white sauce,
hollandaise, beef gravy, etc.), I found myself wondering if the microwave
could be used to make paste as well, and have used it now for a couple of
years to mix up wheat paste.

There is now one "recipe" for making paste this way, since the power output
varies considerably from one microwave to another. I start with 30 seconds
and work up from that.

One of the nicest things about making both sauces and pastes this way is the
convection current set up makes these "self-stirring," though I occasionally
find both pastes and sauces thickening sooner on the bottom of the
containers than on the top. I homogenize the mixture by briefly stirring,
and the final product works fine.
